It’s an interesting time right now with businesses shut down, social distancing, and staying at home a lot more than usual. Even a trip to the grocery store with the shelves fully stocked seems like a luxury these days! You might be finding it a little more difficult to prepare healthy meals if you don’t have the foods and ingredients you’re used to.
By now, you’ve likely stocked up on a bunch of non-perishable foods and frozen foods that will last you awhile. But you may not know how to make delicious recipes with all of the ingredients that you have!
If you’re like me, you’re so used to eating fresh foods – meats, vegetables, salads, fruit – and that may not be easily accessible at the moment. I went to the grocery store last week and the produce section was completely bare with the exception of some apples and bananas!!! There were very few eggs left and virtually no meat.
Thankfully we had already ordered a bunch of frozen wild caught fish online and stocked up on pantry items. But we were still getting low on fresh veggies.
Then I started to realize that we have a lot of good ingredients and we can get creative!
