I am a huge fan of all things pumpkin. Simply enjoying pumpkin around Thanksgiving and Christmas is just not enough. I like incorporating pumpkin into desserts, main dishes, smoothies, and more. Recently, I’ve been experimenting with pumpkin pancakes, and they are delicious. I just had to share this recipe with you. Unlike regular pancakes, these are gluten-free and grain-free. Plus, they have quality protein, and no refined sugar. I’ve gotta admit, when it comes to pancakes, these are pretty healthy, and they taste amazing! Did I mention they’re super easy to make? - blend all ingredients
- in a pan melt butter, ghee, or coconut oil
- pour mixture into pan to form small pancakes (about 3 inches wide)
- cook on medium heat for a minute or two on each side until golden brown
- Serve and top with butter, coconut whipped cream, or eat plain.
**If you are following a low FODMAP diet, clover honey is suitable or you can use pure maple syrup in place of honey.
